FELICIA'S LASAGNA 
1 lb. ground meat
1 (24 oz.) jar spaghetti sauce (your choice)
1 pkg. lasagna noodles (I use Barilla)
cottage cheese (small curds)
shredded Mozzarella cheese
shredded mild cheddar cheese
shredded Mexican "fiesta" cheese
salt and black pepper, to taste

Set oven to 325°F.

Brown ground meat (season with salt and pepper, to taste) and drain. Mix meat with spaghetti sauce.

Meanwhile, cook lasagna noodles until limp (not too firm or over cooked) - don't cool.

Cover bottom of square casserole dish with lasagna noodles. Place closely together without overlapping.

Spread layer of spaghetti sauce and meat mixture. Spread a layer of cottage cheese and gently break up curds to avoid lumps. Spread a layer of all three cheeses. Repeat layers and end with meat and cheese.

Place in oven to completely melt cheese. Watch carefully and do not brown cheese, just melt it.

Remove from oven and let sit to cool until firm enough to cut.
