WILTED LETTUCE OR SPINACH SALAD 
Fresh garden lettuce & other spring greens: Young mustard, spinach, etc, about 1 qt.
6 slices bacon, cooked & crumbled (save drippings)
2-3 green onions, sliced with tops
3 hard boiled eggs, sliced
1/4 c. apple cider vinegar
2 tsp. sugar
Salt & pepper to taste

Tear greens into bite-size pieces. Remove large stems. Put in large bowl with bacon, onions and eggs; toss. Combine remaining ingredients in small saucepan, heat to boiling. Pour over greens, toss, serve immediately.
