BREAD PUDDING | |
3 lg. eggs 1 1/4 c. sugar 1 1/2 tsp. vanilla 1 tsp. nutmeg 1 tsp. cinnamon 1/4 c. butter, melted 2 c. milk 1/2 c. raisins 1/2 c. chopped pecans 5 c. French bread, cubed with crust on 6 egg whites may be substituted for 3 lg. eggs Beat eggs 3 minutes. Add sugar, vanilla, nutmeg, cinnamon and butter. Beat on high until well blended. Beat in milk, then stir in raisins and pecans. Place bread cubes in a greased loaf pan or other suitable dish. Pour the egg mixture over the bread cubes and toss until the bread is soaked. Let sit 45 minutes, patting down bread occasionally. Preheat oven to 350 degrees, lower heat to 300 degrees and bake 40 minutes. Increase heat to 425 degrees and bake 15 minutes. Serve with Cool Whip or ice cream. |
