1 cup brown sugar
½ cup butter
1 egg
½ tsp. vanilla
1 cup peanut butter
½ tsp. baking soda
1½ cups all purpose flour

Heat oven to 375°F.

Combine brown sugar and butter. Beat well. Add egg, vanilla, peanut butter and baking soda. Beat on high until creamy, about 3 to 4 minutes. Mix in flour.

Roll dough into 1" balls and place 2 inches apart on greased baking sheet. Press with fork. Bake 9 minutes. Cool on wire rack.

These store and freeze well. Yield: 36 cookies
