CHOCOLATE COCONUT COOKIES 
1 c. soft Canola butter
1 c. sugar
1 c. brown sugar
2 egg whites
1 tsp. vanilla
5 tbsp. cocoa
2 c. flour
1 c. oatmeal
1 1/2 c. oat bran
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3/4 c. each chocolate chips, nuts, coconut

Preheat oven to 375 degrees. In a large bowl cream together butter, sugar and brown sugar. Add egg whites and mix well. Add vanilla. Sift together all the dry ingredients and gradually add to batter. Batter will become stiff and may need to be stirred by hand. Fold in the chocolate chips, walnuts and coconut.

Drop by teaspoon onto cookie sheet. Bake 8 to 10 minutes. Cool on wire racks. Makes approximately 6 dozen "heart healthy" cookies, low in cholesterol!!
