MRS. G.'S SPONGE CAKE 
2 eggs
1 c. sugar
1 c. flour
1 tsp. baking powder
Pinch of salt
1/2 c. boiling water
2 tbsp. butter
1 tsp. vanilla

Mix all dry ingredients together. Add beaten eggs and lastly add boiling water to which you have added and melted the butter. Mix in vanilla, pour into 8 inch greased and floured pan and bake at 350 degrees until brown and tester comes out dry.

This is an excellent cake for strawberry shortcake, or two layers can be baked and you can ice with lemon filling.

LEMON FILLING:

4 tbsp. cornstarch or flour
1 c. hot water
1 tsp. butter
1 c. sugar
Juice of 1 lemon and grated rind
2 egg yolks
