CHEESE 'N RICE STUFFED PEPPER 
2 green peppers, med.
1/2 c. grated cheddar cheese (2 oz.)
1 c. cooked rice
1/4 tsp. salt
Dash pepper

Preheat oven to 300 degrees. Slice off green peppers. Wash peppers and remove seeds. Stand pepper cups upright in saucepan containing 1/2 cup boiling water. Cover and steam 5 minutes. Drain. Mix together cheese, rice, salt and pepper. Fill each pepper with half of cheese mixture. Stand peppers in loaf pan. Bake for 10 to 15 minutes until cheese melts.
