TALBOULAH SALAD (LEBANESE) 
1/2 c. bulgar (cracked wheat)
3 med. size tomatoes, diced
1/4 c. chopped parsley (if fresh is not available, use dry)
1/4 c. chopped onions
2 tbsp. chopped fresh mint
2 tbsp. lemon juice
1/2 tsp. salt
1/2 sm. cucumber, diced
Pepper to taste

About 2 hours before serving and early in day: In large bowl stir bulgar with 2 cups cold water, let stand about 1 hour. Drain bulgar well, add tomatoes and remaining ingredients; mix well. Cover and refrigerate at least 1 hour. Makes 6 accompaniment servings.
