LEBANESE TABBOULI SALAD 
1 c. cracked wheat
1 bunch parsley, chopped finely, remove stems
3 med. tomatoes, chopped fine
Juice of 3 lemons
4 tbsp. corn oil
1 tbsp. dry or fresh mint flakes
1 cucumber, diced
3 carrots, scraped & diced
1 med. bell pepper, diced
2 hot peppers, diced
1 bunch green onions, diced
1 purple or yellow onion, diced finely
Several diced radishes may be used
Salt & black pepper to taste

Soak cracked wheat 15 minutes, and pour water off, leaving wheat in bowl. Wash, clean and dice vegetables and mix together. Serve with crackers or lettuce leaves. This will refrigerate several days in the refrigerator.
