LEBANESE TABOOLEY SALAD 
2 c. No. 2 cracked wheat
6 med. tomatoes, cut in sm. cubes
1 bunch chopped green onions
2 sm. bunches chopped parsley
1 c. chopped mint leaves
12 tbsp. olive oil
Juice of 2 lg. lemons
Salt and pepper to taste

Wash wheat twice in cold water. Barely cover wheat with water and soak for 2 hours. Drain any remaining water out. Combine all other ingredients. Serves 12 to 15. Serve on lettuce or fresh grape leaves.
