SALMON LOAF 
1 (15 1/2 o.) can salmon, undrained
2 tbsp. fresh parsley, chopped
1/8 tsp. pepper
2 tbsp. lemon juice
2 eggs, beaten
2 c. soft bread cubes or 1/3 c. bread crumbs
1 sm. onion, chopped

Preheat oven to 350 degrees. Generously spray an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with non-stick vegetable spray. In large bowl, flake salmon, removing bones and skin. Add all remaining ingredients, mix well. Press into loaf pan. Bake for 50-60 minutes until golden brown or until toothpick inserted in center comes out clean.

Let stand 5 minutes. Loosen edges and lift out of pan onto serving platter. Cut into 6 slices. 1 servings (1 slice) = 1/2 starch, 1 bread, 2 lean meats. Or 150 calories, 8 gm carb, 16 gm pro, 6 gm fat, 103 mg cho, 404 mg sod.
