SALMON LOAF 
1 (15 1/2 oz.) can salmon, undrained
2 eggs, beaten
2 c. soft bread cubes or 1/3 c. dry bread crumbs
2 tbsp. finely chopped fresh parsley
1/4 tsp. salt
1/8 tsp. pepper
1 sm. onion, chopped
2 tbsp. lemon juice

Heat oven to 350 degrees. Generously grease 8"x4" loaf pan or 8" square pan. In large bowl flake salmon, removing bones and skin. Add remaining ingredients; mix well. Press in greased loaf pan or form into loaf. Shape in greased square pan. Bake at 350 degrees for 50 to 60 minutes or until golden brown and knife inserted in center comes out clean. Let stand 5 minutes. Loosen edges and lift out of pan. To serve, cut into slices. Serves 6.
