SALMON LOAF WITH CHEESE SAUCE 
1 lb. can salmon
2 tbsp. lemon juice
1 1/2 c. soft bread crumbs
1 tsp. sugar
2 eggs, lightly beaten
1 tbsp. minced parsley
1 tsp. grated lemon zest
1/2 c. chopped onion
1/4 c. chopped green bell pepper
1 tsp. hot sauce
1/8 tsp. black pepper

Flake salmon, reserving liquid and remove bones and dark skin. Combine with remaining ingredients. Moisten with salmon liquid. Spoon into a greased loaf pan and bake at 350°F for 35 minutes.

Cheese Sauce:

2 tbsp. butter
2 tbsp. flour
2 c. milk
1/2 lb. sharp Cheddar cheese, shredded

Melt butter in saucepan; add flour and stir until blended. Add milk; cook and stir until thickened. Add cheese and stir until cheese is melted.
