HAWAIIAN CHICKEN 
1 pkg. chicken breast, prepared for stir-fry
1 pkg. boil-in-bag rice
1 mango, chopped
1 can crushed pineapple
1/2 c. brown sugar
Soy sauce

Brown chicken (may use pork or beef) in wok or skillet with oil. Drain any oil, add mango, pineapple (undrained), brown sugar, and 3/4 teaspoon soy sauce. Cook together until thickened. Chop 1/2 head of lettuce and line serving platter. Prepare rice, drain and spread atop lettuce. Add hot meat mixture on top of rice and serve.

This is delicious! I have made it twice and it can be a little overly sweet. So instead of using a can of pineapple and its juice, I substitute with fresh pineapple and 1/2 cup of water and let it reduce.
