MANDARIN SPINACH SALAD 
1 lg. bunch spinach
1 c. finely chopped celery
2 green onions, chopped
1 (11 oz.) can mandarin oranges, drained
1/4 c. toasted slivered almonds
1 tbsp. minced parsley
Few dashes Tabasco sauce (optional)

Mix ingredients and toss with dressing just before serving. 6 to 8 servings.

DRESSING:

2 tbsp. vinegar
4 tbsp. salad oil
2 tbsp. sugar
1/2 tsp. salt
Dash of pepper

Blend dressing for 30 seconds just before using.
