SPINACH MANDARIN SALAD 
2 (3 oz.) pkg. sliced almonds
1 tbsp. sugar
8 c. spinach leaves
1 c. diagonally sliced celery
2 green onions, chopped
11 oz. can mandarin oranges

Combine almonds and sugar in a small frying pan. Cook and stir over medium heat until sugar is caramelized and almonds coated. Put spinach and celery and green onions in a salad bowl. Sprinkle orange slices and almonds on top. Cover and refrigerate.

When ready to serve, toss with Sweet and Sour Dressing. Serve immediately.

SWEET AND SOUR DRESSING:

1/4 c. vegetable oil
2 tbsp. red wine vinegar
2 tbsp. sugar
5 drops Tabasco sauce
1 tbsp. chopped fresh parsley
1 tsp. salt
Dash of pepper

Combine all ingredients in a jar with a secure lid. Shake until well blended. May be made day ahead and stored at room temperature. Serves 8.
