BAKED ORANGE SQUASH 
2 c. cooked, mashed butternut or acorn squash
1/4 c. frozen orange juice concentrate, unsweetened, thawed
A dash ground ginger
1/8 tsp. ground cinnamon
1/2 tsp. grated orange peel
1 tbsp. plus 1 tsp. reduced-calorie butter
Sweetener equivalent to 4 tsp. firmly-packed brown sugar

Preheat oven to 375 degrees. In a medium bowl, combine all ingredients, mixing well. Place mixture in a 1-quart baking dish that has been sprayed with a non-stick cooking spray. Bake, uncovered, 20 minutes.
