HONEY BUTTER BAKED CARROTS 
1 1/2 lbs. carrots, peeled & quartered
1/4 c. butter
1/4 c. honey
1 tsp. grated orange peel
1/4 tsp. salt
Dash of pepper

Place carrot strips in a buttered 1 quart casserole with cover; dot with butter. Pour honey over top. Combine orange peel, salt and pepper. Sprinkle over carrots. Cover and bake in a preheated 350 degree oven for 1 hour, stirring occasionally. Makes 6 to 8 servings.

I may have improved this recipe by melting butter (after coating dish) and adding honey to butter with grated orange peel and salt and pepper and thoroughly coating all carrots before baking. As I did not try it as recipe recommends I cannot be sure. But they were delicious!

Delicious! I had forgotten the proportions I used years ago. I like to combine all ingredients, except carrots, in a skillet and cook on medium heat about 5 minutes. Then I add the carrots for and cook until carrots are barely tender.
