EGGPLANT CASSEROLE 
2 c. cubed, cooked eggplant
2 eggs
2 tbsp. flour
2 tbsp. butter
1 c. milk
1 c. Velveeta cheese, cubed
2 pieces bread, crumbled
1 tsp. salt
1 tbsp. catsup
Onion and pepper to taste

Mix all ingredients thoroughly. Pour into a casserole and bake at 350 degrees for approximately 30 minutes.
