COCONUT PUMPKIN BREAD 
4 eggs
1 1/3 c. oil
2 c. canned pumpkin
2 c. plain flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
2 small pkg. instant coconut pudding mix
1 c. chopped nuts

Combine eggs, oil and pumpkin and beat lightly. Add dry ingredients, including the pudding mix. Blend. Then stir in the nuts. Pour into 2 greased 9 x 4 x 2-inch bread pans and bake in preheated 350°F oven for 1 hour.
