COCONUT BREAD 
4 eggs
2 c. sugar
1 c. oil
2 tsp. coconut flavoring
1 c. chopped nuts
3 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 c. buttermilk
1 c. coconut

Preheat oven to 350 degrees. Mix eggs, sugar and oil; add coconut flavoring. Sift dry ingredients together. Add egg mixture alternately with buttermilk. Add coconut and nuts; mix well. Pour into two greased and floured pans. Bake until tests done with toothpicks. Make a glaze (recipe follows) after bread is out of oven. Poke holes with meat fork so glaze will run down into bread; cool.

GLAZE:

1 1/2 c. sugar
3 tbsp. butter
3/4 c. water
