JOYCE PICKERING'S COCONUT BREAD 
4 eggs
1 c. salad oil
2 c. sugar
2 tsp. coconut flavoring
3 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 c. buttermilk
1 1/2 c. flaked coconut

Beat well in large bowl the first 4 ingredients. Add dry ingredients and buttermilk and mix well. Stir in coconut. Pour into greased and floured angel food pan or 2 loaf pans. Bake 1 hour at 325 degrees.

GLAZE:

1/2 c. water
1 c. sugar
2 tbsp. butter
1 tsp. coconut flavoring

Mix all ingredients and boil 2 minutes. Pour syrup over bread before removing from pan. Let set until cool.

Coconut can be sprinkled on top of each loaf before baking. This recipe will make 6 small loaves; bake 45 minutes.
