PINEAPPLE - COCONUT BREAD 
1 3/4 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/4 c. butter
3/4 c. brown sugar
1 egg
1 (8 1/2 oz.) can crushed pineapple, undrained
1/2 c. pecans, chopped
1/2 c. coconut
1/4 c. chocolate chips

Mix first 7 ingredients together. Add remaining flour. Turn batter into a greased (bottom only) pan. Bake at 350 degrees for 55 to 60 minutes or until bread tests done. Yield: 1 loaf.
