PICKLED RED BEETS 
2 1/2 qt. vinegar
4 qt. sugar
Scant handful whole mixed spices
(Remove hot peppers from spices)

Boil red beets until tender. Skin them and pack into pint canning jars. Have the syrup boiled and pour boiling syrup into the hot packed pint jars of red beets. They will self seal. These make delicious pickled eggs.

To 1 dozen hard boiled eggs use 1/2 cup vinegar and syrup from 1 jar picked red beets boil and pour over hot eggs. Add the beets.
