RITZY PECAN PIE 
2/3 c. egg whites
1 c. sugar
16 oz. Ritz crackers, crumbled
1/4 lb. chopped pecans
1 1/2 tsp. baking powder

Beat egg whites. Mix sugar and baking powder. Add to egg whites. Beat to stiff peaks. Fold in nuts and cracker crumbs. Pour into a greased and lightly floured pie plate.

Bake at 300°F for 45 minutes. Top should be light brown. Top cooled pie with whipped cream. Garnish with extra cracker crumbs and chopped pecans.
