BEET CAKE 
4 eggs
2 c. sugar
1 c. corn oil
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
3 c. fresh beets, shredded
1 c. walnuts, chopped

Beat eggs, sugar and oil. Add flour, baking powder, soda and cinnamon. Add vanilla, beets and walnuts. Beat 1 minute. Bake in 9 x 13 inch pan at 350 degrees for 35 to 45 minutes.

ALMOND SAUCE FOR BEET CAKE:

1 (8 oz.) pkg. cream cheese
1/2 to 3/4 c. whipping cream
1 tsp. almond extract

Mix and frost with this, or top each piece separately.
