BEET CAKE WITH ALMOND SAUCE 
4 eggs
2 c. sugar
1 c. corn oil
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
3 c. fresh beets, shredded
1 c. walnuts, chopped
Almond Sauce walnuts

Beat together the eggs, sugar, and oil until fluffy. Sift together flour and other dry ingredients. Add to the egg mixture. Stir well to blend. Add vanilla, beets, and walnuts. Beat 1 minute. Bake in a 9 x 13 inch pan for 35- 45 minutes at 350 degrees.

ALMOND SAUCE:

Soften 1 (8 ounce) package cream cheese. Blend with 1/2 to 3/4 cup whipped cream and 1 teaspoon almond or vanilla extract until fluffy. Spoon onto the cake or serve separately.
