BEET CAKE 
1/2 c. sugar
3 eggs
3/4 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. vanilla
1 1/4 c. vegetable oil
2 c. flour
3 tbsp. cocoa
1/4 tsp. salt
3 (4 1/2 oz.) jars beet baby food or substitute equivalent amount of fresh pureed beets

Mix together sugar, oil, and eggs. Sift together dry ingredients, then fold into other mixture. Add vanilla and beets; blend well. Pour into greased and floured 9 x 13 inch baking dish. Bake at 360 degrees for 35 minutes or until done. While cake is still warm, frost with Beet Cake Frosting.

BEET CAKE FROSTING:

1 tbsp. milk
1/2 c. sugar
3 tbsp. butter
1/2 c. chocolate chips

Mix together first 3 ingredients and heat to a rolling boil for 30 seconds. Remove from heat and beat. Then add chocolate chips. Beat until well blended. Pour on cake while hot. Frosting will be thin but will set quickly.
