BEET CAKE 
2 jars beets, baby food
1 c. oil
2 c. self rising flour
3 eggs, beaten
2 sq. semi-sweet chocolate
1 1/2 c. sugar
1/2 tsp. baking soda
2 tsp. vanilla

Preheat oven to 350 degrees. Melt chocolate in double boiler. Add sugar and oil, add eggs and vanilla to mixture. Add dry ingredients. Add beets last. Mix well and pour into 13 x 9 inch pan (batter will be thin). Bake 45 minutes or until toothpick comes out of cake clean. Put icing on cake while cake is still warm.

BEET CAKE ICING:

4 tbsp. cocoa
4 tbsp. milk
1 tsp. vanilla
1 stick butter
1 box confectioners sugar

Bring cocoa, milk, and butter to a light boil. Remove from heat and beat in sugar. Add vanilla and spread on warm cake.
