PINEAPPLE NUT CAKE (OLD-TIME) 
2 eggs
2 c. sugar
1 tsp. vanilla
2 tsp. baking soda
1 20-oz. can crushed pineapple, undrained
2 c. flour
1 c. coarsely chopped walnuts

FROSTING:

1 8-oz. pkg. cream cheese
1 1/2 c. confectioners' sugar
1/2 c. (1 stick) butter
1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour a 9x13-inch baking pan.

Beat eggs, sugar, and vanilla until sugar is dissolved. Combine baking soda and pineapple in order to activate baking soda. Beat into egg mixture along with flour. Fold in walnuts.

Pour into prepared pan. Bake 50-60 minutes or until firm. Cool.
