LEMON SAUCE 
1 cup sugar
3 tbsp. flour
pinch of salt
pinch of nutmeg (optional)
2 cups boiling water
4 tbsp. butter
juice of 1 lemon
grated rind of 2 lemons

Combine sugar, flour, salt, nutmeg and water. Simmer over low heat until thickened. Remove from heat.

Stir in butter, lemon juice and rind.

Makes 2 cups of sauce or 16 servings, 2 tablespoons each.
