RICE AND FRUIT PUDDING | |
1 can apricots, chopped 1 c. liquid, use syrup from apricots plus water 1/2 c. rice, uncooked 1 tbsp. butter 1/4 tsp. cinnamon 1/4 c. honey 1. Drain apricots. Save the syrup in a measuring cup. 2. Add water to the syrup to make 1 cup of liquid. Bring the liquid to a boil in a small pot. 3. Stir rice into liquid. Bring to a boil again. 4. Add apricots, butter, and cinnamon to rice mixture. 5. Reduce heat and cover the pot. Simmer for about 20 minutes. |
