EGGPLANT PUFFS 
1 med. eggplant, peeled, sliced and boiled tender
1 egg
1/2 c. sugar
1 c. flour
1 tsp. baking powder

Drain and mash eggplant. Add egg, sugar, flour, and baking powder. Drop small amounts from teaspoon into deep fat. Turn when brown; drain on brown paper or paper towel.
