RICE AND FRUIT 
3 c. cooked rice
1 can pineapple, crushed
1 can mandarin oranges, cut up
2 c. miniature marshmallows
1 (12 oz.) carton whipped topping

Combine in a 2-quart saucepan 1 cup raw rice with 2 cups water, 1 teaspoon salt, 1 tablespoon cooking oil or butter. Stir once or twice. Bring to rolling boil, lower heat to simmer (low boil). Cover with a tight lid and simmer for 15 minutes.

Cool rice. Add crushed pineapple, mandarin oranges, and marshmallows. Mix together with whipped topping. Chill and serve.
