CANDIED SWEET POTATOES | |
4 med. sweet potatoes, unpeeled 1/3 c. sugar 1/3 c. brown sugar 3/4 c. orange juice 1 tbsp. cornstarch 1/4 c. butter Cook potatoes in boiling salted water until almost tender. Remove from water and cool. Remove skin and cut potatoes in quarters. Place in a flat 1 1/2 quart baking dish. Combine other ingredients in a saucepan and bring to a boil. Pour over potatoes, cover and bake at 375 degrees for 15 minutes. Remove cover and cook an additional 10 minutes. Yields 8 servings. |
