APPLE HARVEST BREAD 
1/2 c. butter
2 eggs
2 tbsp. maple syrup
1 tsp. baking soda
2 c. diced apples
1/4 c. chopped pecans
1 c. white sugar
2 tbsp. milk
1/2 tsp. vanilla
1/4 tsp. salt
2 c. sifted flour
Cinnamon

Blend by hand or with mixer the butter, sugar, eggs, milk, maple syrup, vanilla and baking soda until light and creamy.

Beat in flour and salt; blend again until creamy. Mix in apples, then fold in pecans that have been warmed and dusted lightly with flour. Turn into greased 9x5 loaf pan; sprinkle lightly with cinnamon.

Bake at 350°F for about 1 hour. While bread is still warm, brush with a mixture of 1 tablespoon maple syrup warmed with 1 tablespoon butter.
