JAMBALAYA 
1/2 lb. hot smoked sausage
3 tbsp. bacon
1/2 lb. ham, cut in cubes
1 c. chopped onions
3 cloves garlic, chopped
1 bay leaf
2 c. long grained rice, washed
2 lbs. cleaned raw shrimp
Cayenne pepper to taste
1 can tomato sauce

Saute sausage. In another pot, saute ham, onions, garlic, celery, pepper, bay leaf in bacon grease. Add rice and saute 3 minutes longer, stirring constantly. Add tomato sauce, shrimp, salt, pepper and Tabasco. Add water or shrimp stock until rice mixture has about 1/2 inch liquid covering it. Add shrimp and cook covered over low heat until liquid is absorbed and rice is tender.
