JAMBALAYA 
1/2 c. chopped onion
1/2 c. chopped garlic
2 tbsp. butter
3/4 c. uncooked white rice
3 1/3 c. butter
3 1/2 c. (2, 14 oz. cans) contadina stewed tomatoes
1 c. water
1/2 tsp. thyme
1 crushed bay leaf
1 tsp. salt
1/8 tsp. pepper
2 c. ham
2 c. cooked shrimp

Saute onion, green onion and garlic in butter. Add tomatoes, water and seasoning. Stir until tomatoes are broken. Stir in remaining ingredients. Cover and bring to boil. Reduce heat then simmer covered for 30 minutes. Stir occasionally.
