BASIC CRUSTLESS QUICHE 
1/4 lb. butter
10 eggs
1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 lb. lg. curd cottage cheese
1/2 lb. Swiss cheese, shredded
1/2 lb. Monterey Jack cheese, shredded
Optional spices: parsley, garlic, or tarragon

Melt the butter. Whip eggs fluffy. Next add baking powder, salt, cottage cheese, melted butter, and half of shredded cheeses. You can add vegetables or cooked meats at this time, if you like. Place mixture in greased 9 x 13 inch baking dish. Top with remaining shredded cheeses. Bake at 400 degrees for 15 minutes. Reduce temperature to 350 degrees and continue to bake 35 to 40 minutes or until top is lightly browned. Cool; cut into squares. Serves 8 to 10 people.
