BAKED CHICKEN RUEBEN 
4 whole chicken breasts, halved & boned
1/4 tsp. salt
1/8 tsp. pepper
1 (16 oz.) can sauerkraut, drained
4 slices Swiss cheese
1 1/4 c. Thousand Island dressing
1 tbsp. chopped parsley

Place chicken breasts in greased baking pan. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with Swiss cheese. Pour salad dressing evenly over cheese. Cover with foil.

Bake at 325 degrees for approximately 1 1/2 hours. Sprinkle with chopped parsley before serving. Serves 4 to 8.
