2 c. milk
3/4 c. sugar
1/2 c. biscuit mix
4 eggs
1/4 c. butter
1 tsp. vanilla
1 1/3 c. (3 1/2 oz.) Baker's Angel Flake coconut

Combine all ingredients except coconut in blender. Blend on low speed 3 minutes. Pour into greased 9-inch pie plate. Sprinkle with 1 cup of coconut. Bake at 350 degrees for 40 minutes until top is brown. Garnish with remaining coconut.
