AMAZING COCONUT PIE 
2 c. milk
3/4 c. sugar
1/2 c. biscuit mix
4 eggs
1/4 c. butter
1 c. coconut

Combine milk, biscuit mix, eggs, butter and vanilla in a blender container. Cover and let blend at low speed 3 minutes. Pour into greased 9-inch pie pan. Let stand 5 minutes, then sprinkle with coconut. Bake at 350 degrees for 40 minutes. Serve warm or cool. Store leftovers in refrigerator.
