FRESH RHUBARB COBBLER 
1 c. sugar
1/3 c. Bisquick
1 tsp. lemon peel, grated
4 c. rhubarb, thinly sliced

Combine these ingredients and toss lightly. Place in a 9-inch well-buttered baking pan.

TOPPING:

3/4 c. Bisquick
1 egg, beaten with 1/4 tsp. vanilla
2/3 c. sugar
1/4 c. butter, melted

Combine Bisquick and sugar. Stir in egg until mixture resembles real coarse crumbs. Sprinkle over fruit mixture. Drizzle melted butter over crumbs and bake in a 350 degree oven for 40 minutes or until top is done. Serve plain or with whipped cream, ice cream or whipped topping.
