AMAZING COCONUT PIE 
2 c. milk
3/4 c. sugar
1/2 c. biscuit mix
4 eggs
1/4 c. butter, soft
1 1/2 tsp. vanilla
1 c. flake coconut

Combine sugar, milk, biscuit mix, eggs, butter and vanilla in electric blender. Blend on low speed for 3 minutes. Pour into greased pie pan. Let stand about 5 minutes. Then sprinkle with coconut. Bake in 350 degree oven for 40 minutes.

Note: For egg custard, make pie as above, but omit coconut and sprinkle top with nutmeg before baking.
