STUFFED ZUCCHINI 
1 medium or 2 sm. zucchini, yellow squash, medium tomato, or green pepper
1/2 c. water
1 tbsp. butter
1 c. Stuff Top stuffing (any flavor)
Shredded Cheddar cheese

Cut zucchini (or vegetable you are using) in half lengthwise and remove seeds and pulp. Reserve pulp. Place zucchini in a greased, shallow pan. Combine water and butter in small pan. Bring to a boil. Stir in stuffing mix and reserve pulp. Spoon into vegetable halves. Sprinkle with cheese. Bake at 400 degrees for 20 to 25 minutes or until tender. Serves 2.
