STUFFED ZUCCHINI | |
6 med. zucchini 1 med. tomato 1 1/2 tsp. instant minced onion 1/4 tsp. basil leaves 1/8 tsp. thyme leaves 1 tsp. season salt 2 slices fresh bread, crumbled 2/3 c. shredded cheddar cheese Cook whole zucchini in boiling water for 5 minutes. Cut off top third lengthwise and scoop out seeds. Arrange zucchini shells in baking dish. Chop seed portion of zucchini. Peel and seed tomatoes, chop pulp. Combine chopped zucchini, tomato pulp and next 5 ingredients; mix well. Stuff zucchini and bread mixture. Top with shredded cheese and bake in 350 degree oven for 25 minutes. Makes 6 servings (1 zucchini each). Dice top 1/3 of zucchini and add to stewed tomatoes to make an interesting vegetable combination, or add to vegetable soup, or slice and add to tossed salad. |
