APPLE - SAUSAGE SCRAMBLE 
1 lb. pork sausage
6 lg. pippin apples, peeled & cored
2 tbsp. sugar
1/4 tsp. cinnamon
2 tbsp. butter
6 eggs, beaten to blend

Shape sausage into 3-inch patties. Cook in large dry skillet over medium-high heat until browned, 7 minutes per side. Pour off fat in skillet. Reduce heat to medium. Thickly slice apples and add to skillet; sprinkle with sugar and cinnamon and cook until softened, stirring frequently, about 10 minutes. Transfer mixture to serving platter and keep warm. Melt butter in medium skillet over low heat. Add eggs and scramble to desired firmness. Add to platter and serve. Serving size: 4.
