CHEESY SQUASH CASSEROLE | |
2 lbs. peeled zucchini squash 1 red onion, chopped 3 tbsp. butter 4 tbsp. flour 1 tsp. salt 1/2 tsp. pepper 2 c. Jack cheese, grated 2 eggs 1 1/2 cottage cheese 2 tbsp. parsley 1/2 Parmesan cheese Saute diced zucchini and onion in butter, until tender. Add flour, salt, and pepper; remove from heat. Place in oblong baking dish (11 3/4 x 7 1/2 inches). Sprinkle Jack cheese on squash. Mix eggs, cottage cheese, and parsley; spoon over cheese. Sprinkle with Parmesan cheese. Bake uncovered, at 400 degrees, about 30 minutes until bubbly and lightly browned. |
