MEXICAN HAMBURGER PIE 
3/4 c. cooked rice
1 lb. ground beef
1 med. onion, diced
1 carrot, diced
1 can tomatoes
1 tbsp. curry powder
1/4 tsp. black pepper
1/4 tsp. salt
1/2 c. frozen or canned green peas

Cook rice - but salt very lightly. Place ground beef in large skillet. Add onions and carrots. Brown and drain off fat. Pour in tomatoes, stirring into mixture. While simmering, add spices and green peas. Simmer until done. Add water to mixture for the consistency you desire. Spoon over fluffy rice.
