SPINACH SALAD AND DRESSING 
4 c. fresh spinach leaves
3 hard cooked eggs, sliced
6 strips bacon, cooked until crisp, then crumbled
1/4 red onion, sliced very thin
1/2 c. mushrooms, sliced (optional)

DRESSING:

1/4 c. vinegar (cider)
1/3 c. sugar
1/4 c. oil
1/2 tsp. dry yellow mustard
1/2 tsp. red onion juice
Salt & pepper

In blender or food processor, put oil, sugar, onion juice and process until smooth. While processor is running, add vinegar. Pour on salad and toss. Serve immediately. May decorate with sliced egg.
